Mango-Radish-Cucumber Salad with Lime Dressing

I first saw this recipe in an old issue of Martha Stewart Living and discovered that it’s also at MarthaStewart.com. The vivid colors drew me to this salad recipe and I knew I had to try it out! It’s not a combination I would have thought up myself for a salad, but I really liked it…the soft, sweet mango wedges combined with the crunchy cucumber slices and radishes taste really great with the tangy-sweet lime dressing!

I didn’t add lime zest to the dressing like the original recipe says to, but the dressing was still great. It’s such a healthy, summery salad…and you could serve it at a brunch or as a side at lunch or dinner. Hope you get to try it out soon!

MANGO RADISH CUCUMBER SALAD WITH LIME DRESSING by NancyC, slightly adapted from Martha Stewart Living

Makes 4 servings

  • 1 mango, peeled and cut into wedges
  • 1/2 of an English cucumber, thinly sliced (or substitute one medium-size regular cucumber)
  • 1 bunch radishes (about 8), halved or quartered
  • 1 Tablespoon finely grated lime zest (optional)
  • 2 Tablespoons lime juice (or juice from 2 limes)
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon honey
  • dash of salt

Arrange wedges of mango, cucumber slices, and radish chunks on a platter.

Make the dressing: In small bowl, whisk together the lime juice, lime zest (optional), olive oil, and honey. Add a dash of salt to taste.

Drizzle Lime Dressing over salad. Season with more salt if desired (I didn’t add any more salt at this point when I made mine).

      I think the radishes are in the salad more for the crunchy texture, since it’s true they don’t have much flavor. There’s probably something else you could substitute if you wanted. Thanks for letting me know what you thought, Betty!
