Watermelon Ice

Nothing beats a nice cold, juicy slice of watermelon on a hot summer day…well, except for Watermelon Ice! It’s another great way to enjoy this delicious melon. And very easy to make, too. It’s sweetened with honey, so there’s no sugar in it, which makes it more healthy. And it has some lime juice to give it a little zing. It’s like having a healthy snow cone! It makes a nice summer dessert or snack. This recipe makes about 4 servings.

INGREDIENTS:

  • 2 Tbsp. water
  • 4 cups cubed watermelon with seeds removed
  • 2-4 Tbsp. lime juice
  • 2-4 Tbsp. honey (depending on how sweet you like it)

Put all of the ingredients in a blender or food processor; cover and blend until smooth. Pour mixture into a 9-inch square dish or similar-sized plastic freezer container; cover and freeze until solid.

Before serving time, you can either…

  1. Remove watermelon ice from freezer and let thaw for about 15-20 minutes (you need to do this, especially if you’ve kept it in the freezer a few days, because it is rock hard when you take it out of the freezer!). Then, after letting it thaw, take an ice cream scoop and scrape the ice into shavings (if the ice is still too hard to do this, you’ll need to let it thaw a little more); put in small dessert bowls and serve immediately. OR…
  2. Break the frozen watermelon into chunks (after letting it thaw slightly) and process in a food processor until smooth. Put in small bowls and enjoy!

I just thought of something…I bet this would also be good if you used honeydew or cantaloupe instead of watermelon. I’ll have to add that to my “to try” list!
