If you’re looking for a muffin with lots of orange creamy flavor, you’ve come to the right place! I tested and retested and tweaked this recipe to get a nice orange flavor and moist texture…and the white baking morsels give it a rich, creamy taste. It’s topped with a yummy orange glaze, too. This recipe makes 12 regular-size muffins.
BATTER INGREDIENTS:
- 2 1/4 cups all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup sugar
- 1/2 cup milk
- 1 egg
- 1/2 cup orange-flavored yogurt
- 1/3 cup orange juice concentrate, thawed and undiluted
- 1/4 cup butter, melted
- 1 Tbsp. grated orange rind
- 1 tsp. orange extract
- 1 cup white baking morsels
Preheat oven to 400 degrees. Line a regular-size muffin pan with paper liners. In large bowl, combine flour, baking powder, baking soda, and salt; blend together and set aside. In medium bowl, combine sugar, milk, egg, orange yogurt, orange juice concentrate, melted butter, orange rind, and orange extract; mix until blended. Add this mixture to flour mixture and stir until dry ingredients are just moistened. Stir in the white baking morsels. Spoon batter into muffin cups (fill about 3/4 full, or just a bit more-there will be a little batter left over) and bake at 400 degrees for 15-17 minutes or until lightly browned. Cool 5-10 minutes and remove from pan. While waiting for the muffins to cool, you can mix the glaze…
ORANGE GLAZE:
- 1 cup powdered sugar
- 1 Tbsp. orange juice concentrate, thawed and undiluted
- 1 Tbsp. milk
- white baking morsels for garnish
Add ingredients together in small bowl and blend well, until sugar is dissolved. Spoon over muffins, and sprinkle some white baking morsels on top.
Since this muffin has orange juice concentrate in it, maybe eating one can count toward your Vitamin C intake for the day!

Hydrangeas are a favorite of mine, too! I’ve tried planting a few in the spring, but they didn’t take, so I’m going to try planting one this fall. I bet your yard is beautiful with all those bushes!
